Mushroom coffee keeps the ritual and the taste of coffee, with four times less caffeine than a classic cup and adaptogenic mushrooms and plants dosed to the milligram. Our version is called Brainstoorm: 6 040 mg of actives per cup, Lion's Mane, Cordyceps and Chaga at 1 000 mg each, 20 mg of microencapsulated caffeine and no mushroom taste. Made in Toulouse 🇫🇷.
The definition
What is a mushroom coffee?
A mushroom coffee is a drink that combines coffee, or a coffee taste, with extracts of so-called functional mushrooms. Nothing to do with the button mushrooms in your omelette. We are talking about Lion's Mane, Cordyceps, Chaga or Reishi, species used for centuries in Asian and Nordic traditions.
It is best known as mushroom coffee. You will also come across “functional coffee”, “adaptogenic coffee” or “super coffee”. Behind these names lies the same idea: keeping the pleasure and the ritual of the morning cup, while cutting the caffeine and adding ingredients chosen to carry you through the day.
And no, a good mushroom coffee does not taste of mushroom. The mushrooms are used as dry extracts, as a fine powder whose taste melts into the coffee, the chicory or the cocoa.
It is also an alternative to coffee for those who want to ease off the caffeine without giving up their morning appointment. You keep the hot cup, the smell, the gesture. You simply change what is inside.
What is in the cup
6 040 mg of actives, stated to the milligram.
The first criterion of a mushroom coffee is the dose. Many products advertise a long list of mushrooms without saying how much of each is in your cup. We did the opposite: everything is written down, ingredient by ingredient.
| Per cup | Brainstoorm Café | Brainstoorm Chocolate-hazelnut |
|---|---|---|
| Powder serving | 6 g | 8 g |
| Total actives | 6 040 mg | 6 225 mg |
| Lion's Mane | 1 000 mg | 1 000 mg |
| Cordyceps | 1 000 mg | 1 000 mg |
| Chaga | 1 000 mg | 1 000 mg |
| Maca | 3 000 mg | Yes |
| Plants | Chicory, ashwagandha | Ashwagandha, rhodiola |
| NewCaff® caffeine | 20 mg, microencapsulated | 20 mg, microencapsulated |
| Taste | Roasted coffee, chicory notes | Cocoa and hazelnut |
The mushroom coffees you commonly find sit at around 3 000 mg of actives per cup. With more than 6 000 mg, Brainstoorm is three times more highly dosed: it is today the most highly dosed mushroom coffee in France.
Why 1 000 mg per mushroom? Because below that, the ingredient is often there for the label rather than for the cup. And maca, at 3 000 mg, brings a slightly malty roundness that goes very well with coffee.
The caffeine, finally, is not an ordinary caffeine. NewCaff® is a microencapsulated caffeine: it is coated so that it is released more gradually than in a classic coffee. You keep a small boost, without the sharp rise or the mid-afternoon drop. Also worth reading: Adaptogenic mushroom and plant drinks: recipes.
Against classic coffee
Mushroom coffee or classic coffee: the match.
This is not a war on coffee. Coffee is an excellent drink, and many of our customers keep drinking it. The real question is: what do you need in your cup, and at what time of day?
| Classic coffee | Brainstoorm | |
|---|---|---|
| Caffeine per cup | Around 80 mg | 20 mg, microencapsulated |
| Adaptogenic mushrooms and plants | None | 3 000 mg (Lion's Mane, Cordyceps, Chaga) |
| Other actives | None | Maca, ashwagandha, chicory or rhodiola |
| Effect felt | A fast peak, then sometimes a slump | Steadier energy, according to our customers |
| After 4 p.m. | Often not advised if you sleep badly | Possible for many people, with only 20 mg |
| Preparation | Machine, filter, capsule | Soluble powder, water or milk, hot or cold |
| Taste | Coffee | Coffee or chocolate-hazelnut, with no mushroom taste |
To put these figures in context, the European Food Safety Authority (EFSA) considers that a healthy adult can consume up to 400 mg of caffeine per day, and up to 200 mg in a single intake, without risk to health. Three or four coffees are enough to come close. With Brainstoorm, three cups amount to only 60 mg.
Many of our customers therefore mix the two: a classic coffee on waking, if they insist on it, then Brainstoorm for the second cup and the afternoon break. Others replace their coffee entirely. Both approaches are just as valid: your rhythm decides.
The mushrooms in the cup
Three mushrooms, three roles.
We did not choose the mushrooms at random. Each one has a history, a signature molecule and a different value in a working day. To go further, each has its own full page.
Lion's Mane
The lion's mane mushroom, recognisable by its long white spines. Studied in connection with its hericenones and erinacines, it is seen as the mushroom of concentration. All about Lion's Mane.
Cordyceps
The mushroom of the Himalayan high plateaus, now grown. Studied in connection with energy and endurance, it contains cordycepin. All about Cordyceps.
Chaga
A black growth that develops on the birches of cold forests. Rich in polyphenols and melanin, it has been drunk as a decoction in Russia for centuries. All about Chaga.
Maca, ashwagandha, rhodiola
An Andean root, an ayurvedic plant and an adaptogenic plant from cold regions. Ashwagandha and rhodiola also have their page.
And Reishi? That is the evening mushroom, linked more to relaxation. It has no place in a morning cup: with us it sits in the Anti-Stress Complex and Sleep+ capsules. Chicory, for its part, gives Brainstoorm Café its roundness and its roasted side.
What the research says
Mushrooms that are studied, not promises.
Research on functional mushrooms is young in humans: a lot of laboratory work, a few small clinical trials. Here are two frequently cited studies on the mushrooms in Brainstoorm, and the official benchmark on caffeine, with their exact conditions.
Mori et al., 2009 · Japan
30 Japanese adults aged 50 to 80, with mild cognitive decline, took tablets of Lion's Mane powder, that is 3 g per day, for 16 weeks. Their scores on a cognitive test improved compared with the placebo group, then fell again after they stopped.
Chen et al., 2010 · United States
20 healthy older adults took a Cordyceps extract (Cs-4), around 1 g per day, for 12 weeks. The researchers observed an improvement in certain respiratory thresholds during exercise compared with placebo.
EFSA, 2015 · European Union
The reference scientific opinion on caffeine: up to 400 mg per day and 200 mg per intake for a healthy adult, 200 mg per day during pregnancy and breastfeeding.
What to take away: serious leads, on small groups and precise doses. That is why we state our doses and why we refuse microdoses. The full references are at the bottom of the page.
Who is it for?
A mushroom coffee is made for you if…
- You love coffee, but the slump at 4 pm catches up with you every day.
- You get jittery or your hands shake after two or three cups.
- You want to cut the caffeine without giving up your morning ritual.
- You string together days of concentration, screens and meetings.
- You are looking for a hot drink for the afternoon that will not ruin your evenings.
- You want dosed and stated ingredients, not a list of fashionable names.
Students during exams, freelancers, parents juggling everything, athletes who want a gentler coffee before training: our customers have very different profiles.
Coffee or chocolate-hazelnut
Two flavours, two moments.
Brainstoorm comes in two versions. The same mushroom base, the same gentle caffeine, but two different characters. Many of our customers alternate between the two with the Coffee Pack.
Brainstoorm Café
The taste of a roasted coffee, rounded off by chicory and maca. A 6 g cup for 6 040 mg of actives. The morning companion, black or with a cloud of milk.
Brainstoorm Chocolate-hazelnut
An indulgent hot chocolate, cocoa and hazelnut, with rhodiola on top. An 8 g cup for 6 225 mg of actives. Perfect for the afternoon break.
If you cannot decide, ask yourself a simple question: is your favourite moment the waking cup or the afternoon snack? For the first, the Coffee version. For the second, the Chocolate-hazelnut version.
How to prepare it
A cup ready in 30 seconds.
No machine, no filter, no capsule to throw away. Brainstoorm is a soluble powder that you prepare like an instant coffee, hot or cold.
The right serving
One scoop: 6 g for the Coffee version, 8 g for the Chocolate-hazelnut version.
The liquid
About 200 ml of hot water, milk or plant drink. Avoid boiling water, go for water just off the boil.
The gesture
Stir well, with a spoon, a mini whisk or a milk frother for a creamier texture.
For a more intense version, first pour a little hot water over the powder, stir to a smooth paste, then top up with the rest of the liquid.
Quick recipes
Four ways to drink it.
Brainstoorm lends itself to every mood, from the black cup in the morning to the iced glass in summer. Here are our favourite recipes, ready in under two minutes.
The smooth latte
One serving of Brainstoorm Café, a little hot water, then 150 ml of frothed oat milk. A pinch of cinnamon on top.
The iced coffee
One serving dissolved in a little hot water, then poured over ice cubes with cold milk. Ideal as soon as the weather turns.
The indulgent mocha
Half a serving of each flavour, in hot milk. The best of both worlds, coffee and chocolate-hazelnut.
The athlete's shaker
One serving of Chocolate-hazelnut in a shaker with cold milk or a plant drink, before training.
Choosing well
How to choose a mushroom coffee without getting it wrong.
The mushroom coffee market has exploded, and not all products are equal. Before you buy, here are the five points to check on the label.
- The dose per cup: each mushroom must be dosed in milligrams per serving. Be wary of “proprietary blends” with no detail. With us, 1 000 mg of each mushroom per cup.
- The fruiting body: this is the visible part of the mushroom, the richest in compounds of interest. Mycelium grown on cereals can contain a significant share of its growing support.
- The extract: an extract concentrates the compounds of the mushroom and makes them easier to take up than a simple ground powder. That is what we use.
- The stated caffeine: a good mushroom coffee says how much caffeine it contains. With us, 20 mg of microencapsulated NewCaff® caffeine.
- The transparency: an identified place of manufacture, clear formulas and a guarantee. The Brainstoorm recipes are developed and produced in Toulouse, France, by a French contract manufacturer, vegan, GMO-free and gluten-free, with a 60-day money-back guarantee.
An organic mushroom coffee? That is an interesting criterion, but it says nothing about the dose. A product can be organic and contain only a few hundred milligrams of mushrooms. Look first at the dosage, then at the quality of the raw materials.

Precautions
What to know before your first cup.
Brainstoorm is well tolerated by the vast majority of adults. It does, however, contain caffeine, mushrooms and plants: a few common-sense precautions apply, as with any food supplement.
A mushroom coffee remains a drink in its own right. Here are the situations where it is better to ask for advice.
- During pregnancy and breastfeeding, ask your doctor for advice: Brainstoorm contains ashwagandha and adaptogenic plants.
- It is not advised for children and adolescents.
- If you are on medication, in particular for the thyroid, blood pressure, diabetes or blood clotting, talk to your doctor or your pharmacist.
- If you have a known mushroom allergy, do not take it.
- Remember to add up the caffeine in all your drinks across the day: coffee, tea, soft drinks, energy drinks.
- Stick to the stated serving and do not use it to replace a varied and balanced diet.
The side effects reported with mushroom coffees are rare and generally mild, most often digestive discomfort in the first few days. If that happens to you, start with half a serving for a week.
Your questions
Everything people ask us about mushroom coffee.
What is mushroom coffee?
It is a drink that combines the taste of coffee with extracts of functional mushrooms such as Lion's Mane, Cordyceps or Chaga. It generally contains less caffeine than a classic coffee. With us, 20 mg per cup and 6 040 mg of actives.
Does mushroom coffee taste of mushroom?
No. The mushrooms are used as dry extracts, whose taste melts into the coffee, the chicory or the cocoa. Brainstoorm tastes of a roasted coffee, or of a chocolate-hazelnut depending on the version.
What are the benefits of mushroom coffee?
It makes it possible to cut the caffeine sharply while keeping the coffee ritual, and to bring in mushrooms studied in connection with concentration and energy. Our customers mainly describe steadier energy, without the afternoon slump.
How much caffeine does Brainstoorm contain?
20 mg per cup, as microencapsulated NewCaff® caffeine, against around 80 mg for a cup of classic coffee. It is the same amount in the Coffee and Chocolate-hazelnut versions. To go further, discover the 6 criteria for choosing a mushroom coffee.
How many cups can you drink per day?
One or two cups a day are enough for most people, in the morning and in the early afternoon. Stick to the serving stated on the packaging and take into account the caffeine in your other drinks.
How long before you feel an effect?
The caffeine makes itself felt within the hour. For the mushrooms, the trials ran over several weeks: allow at least three to four weeks of regular drinking before you take stock.
Does mushroom coffee make you lose weight?
No, and that is not its role. A mushroom coffee is not a slimming product. It does, on the other hand, drink very well without sugar, black or with a plant drink.
What are the side effects of mushroom coffee?
They are rare and generally mild, mainly digestive discomfort in the first few days. It is not advised during pregnancy without medical advice, for children, or if you are allergic to mushrooms. Ask for advice if you are on medication.
Can you drink it in the afternoon or in the evening?
In the afternoon, yes: it is even one of our customers' favourite moments, with only 20 mg of caffeine. In the evening, it depends on your sensitivity to caffeine. If you sleep badly, keep it for the daytime.
What is the link with coffee grounds for growing mushrooms?
None. Growing oyster mushrooms on coffee grounds is an anti-waste gardening tip. Mushroom coffee, on the other hand, is a drink that contains extracts of functional mushrooms.
Where to buy mushroom coffee?
Directly on mushngo.com, with free delivery from €59 in France and from €69 to €89 across Europe, depending on the destination, the choice between a one-off purchase and a monthly subscription (−30 %) and a 60-day money-back guarantee. The Brainstoorm recipes are developed and produced in Toulouse, France, by a French contract manufacturer, vegan, GMO-free and gluten-free.
